White Pepper (prik thai) is a key ingredient in Thai cuisine and is much preferred over black pepper. Thai white pepper is not the same as Western-style white pepper, because it is actually slightly fermented.


The Dried Puya Chili Pepper is normally used in Mexican cuisine, but it can also be used for Thai cooking. Many American chefs prefer this type of dried red chili pepper because of its complex flavor.

The hot sauce world was rocked earlier this week when the city of Irwindale filed suit against Huy Fong Foods, one of the best-known brands of Sriracha hot sauce, after residents complained of the pepper odor causing headaches and sore throats.


Increase the heat to medium-high; add wine, and bring to a boil. Cook until reduced by two-thirds, about 4 minutes. Add enough water to come up to the level of the peppers. Bring to a simmer. Stir in the star anise, clove, and bay leaves; cook for 15 minutes. Remove from heat, and add thyme. Let stand until room temperature; strain through a damp cheesecloth-lined sieve. You should have about 2 cups. Refrigerate until chilled, about 1 hour. When cold, season with salt.


In a small skillet, heat about 2 teaspoons oil over medium-high heat. Add 1/5 of the shallot, and 1/5 of the garlic. Cook until translucent. Add the tomato; season with salt and pepper. Cook, stirring frequently, until soft, about 1 minute. Transfer to a paper-towel-lined baking sheet to drain. Repeat with remaining shallots, garlic, and vegetables, cooking each vegetable separately.


Combine the cooked, drained, and cooled eggplant, yellow squash, zucchini, and bell pepper in a medium bowl. Add just enough of the tomato to bind the mixture together. Stir in the herbs. Season with salt and pepper; set aside.


The Caravelle is available in three different wrappers: Natural, Extra Claro, and Maduro. All three options have a variety of aged Dominican fillers. The natural is an Ecuador Havana that is light-medium bodied. There are hints of nuts, spice, and a slight sweetness here and there. The Extra Claro Candela wrapper is mild and has a very green flavor. There are hints of sweet grass and earth. The Broadleaf maduro wrapper is medium bodied with hints of pepper, sweet hay, and earth. All three versions of the Cuesta-Rey Caravelle are super smooth with plenty of flavor.

There are a few key differences between sweet chili sauce and regular chili sauce.
